Stilton Topped Salmon on a bed of Mushrooms and Wilted Spinach









Ingredients <Serves 2>

  • 2 Fillets of Salmon
  • Handful spinach
  • ½ red onion (diced)
  • 4 thin slices stilton
  • 2 medium glasses white wine
  • Aluminium foil


  • Create two parcels with the foil and into them, put the spinach, followed by the diced onion and finally the mushrooms.
  • Next, place the salmon fillets on top of the spinach, onions and mushrooms and top each with two slices of stilton.
  • Finally pour a glass of white wine into each of the parcels and seal them tightly, place them on a baking sheet and cook in a high oven for around 20 minutes.
