Lemon Sole Tray Bake

Ingredients

  • 4 Lemon Sole (trimmed)
  • Vine tomatoes
  • Salt and pepper
  • Olive oil

Method

  • Drizzle your tray with some of the oil and season well
  • Make three cuts across the back of the fish and then lay them in the tray white side down.
  • Drizzle the fish with a little more oil and season, lay the vine tomatoes around the edges and bake in the oven for around 20 minutes.
  • Serve with potato cakes or a mash.
