- 4 Lemon Sole (trimmed)
- Vine tomatoes
- Salt and pepper
- Olive oil
- Drizzle your tray with some of the oil and season well
- Make three cuts across the back of the fish and then lay them in the tray white side down.
- Drizzle the fish with a little more oil and season, lay the vine tomatoes around the edges and bake in the oven for around 20 minutes.
- Serve with potato cakes or a mash.
