Beer Batter Oyster Croquettes
Ingredients
- 6 Brancaster Oysters
- 1 cup flour
- 1 cup good beer
- 1 egg
- Pinch baking soda
- Oil for frying
Method
- In a bowl whisk together the batter ingredients and leave to stand for a few minutes
- Chop up your oysters and then add to the mixture
- In a heavy bottomed saucepan or skillet heat the oil and then fry off the oyster batter in batches or around a tablespoon at a time
- Drain on some kitchen towel and serve
