Beer Batter Oyster Croquettes

Ingredients

  • 6 Brancaster Oysters
  • 1 cup flour
  • 1 cup good beer
  • 1 egg
  • Pinch baking soda
  • Oil for frying

Method

  • In a bowl whisk together the batter ingredients and leave to stand for a few minutes
  • Chop up your oysters and then add to the mixture
  • In a heavy bottomed saucepan or skillet heat the oil and then fry off the oyster batter in batches or around a tablespoon at a time
  • Drain on some kitchen towel and serve
