Gurnard with Sage Butter
Ingredients <Serves 4>
- 2 Gurnard Fillets
- Tbsp Butter
- Salt and pepper
- Tsp Dried Sage
Method
- Take a frying pan and drizzle in a small amount of oil. Cut each Gurnard fillet in half.
- Once your pan is very hot, pan fry the Gurnard skins side down, they have a tendency to curl up when frying them so either cut three slits in the back of each fillet or put an up-turned plate on top of them whilst they cook.
- Remove the gurnard from the pan and melt the butter, add the sage, salt and pepper and stir, add the gurnard back to the pan baste and serve.
