- 2x Sea Bream Fillets
- 1 Tin Chopped Tomatoes
- 2 tbsp Chilli Relish
- 1 Onion chopped
- 1 clove garlic crushed
- Splash Red Wine Vinegar
- 1 tsp Dried Basil
- 250g Penne Pasta
- Boil the pasta in salted water once its cooked drain but don’t rinse it as the starch will help the sauce to stick.
- For the sauce, fry off the onion a garlic in a saucepan until softened. Once you’ve done that add the chopped tomatoes, chilli relish, basil and the red wine vinegar and reduce until thick.
- In the meantime, grill or pan fry you Bream and once cooked, flake into a dish ready for use later.
- In the pasta pan, add the sauce and the flaked bream, give it a good stir and garnish with some parsley
