Deep Fried Whitebait with a Garlic Dip
Ingredients
For the Whitebait
- 500g Frozen Whitebait
- Flour for coating
- Salt and Pepper
- 200ml Cooking Oil For the Dip
For the Dip
- 2 Tablespoons Mayonnaise
- 1 Clove fresh Garlic
Method
- Pour the flour into a sandwich bag so the bag is about ¼ full
- Add the salt and pepper to the flour and shake so the seasoning is evenly spread throughout the flour
- At this point heat the oil in a saucepan , to check the oil is ready for frying take a breadcrumb and add it to the oil if it crackles when it hits the oil , it is the right heat to fry the white bait
- Once the oil is heated take a handful of whitebait, place it in the bag and shake so the whitebait is well coated
- Take out the coated whitebait and fry in the Oil, repeat this until all of the whitebait has been cooked.
- Once all cooked leave to drain for a while on some Kitchen Towel
- Whilst the whitebait is draining place the Mayonnaise in a bowl and crush the Garlic Clove, and mix into the Mayonnaise then either, spoon into a ramekin or place a teaspoon full on each plate
- Then add the whitebait to the plates and serve.
