Soft Herring Roe on Toast
The creamy texture of the Herring Roe, is complimented excellently by the crunchy texture of the toast, and the spice kick of the Cayenne Pepper, great as a starter or as an indulgent supper time snack!

Method
1. In a shallow bowl, mix the flour and cayenne pepper together. Dip the roes in the mixture to coat thoroughly. Dust off any excess flour.
2. Heat a frying pan with the butter, then fry the roes on either side for 2 minutes, or until they turn golden-brown.
3. While the roes are cooking, slice and toast the bread in a toaster or under the grill.
4. To serve, top the toast with the herring roes and squeeze over the lemon juice to taste.
