Moroccan Cod Cheek Tagine
Ingredients
– 500g Cod Cheeks
– 1 Seymours Moroccan Tagine Spice Mix
– 1 Tin Chopped Tomatoes
– 1 Courgette (Chopped)
– Chickpeas
– 1 Onion
– 1 Clove Garlic Crushed
– Salt and Pepper
– 1 cup Cous Cous
Method
- In a flame resistant oven dish, Chop the onion, crush the garlic and cook until the onion is softened
- Then add the chopped tomatoes, Courgette, Chickpeas and Tagine Spice mix and stir together for about a minute
- Then stir in the cod cheeks making sure that they well coated in the sauce
- cook in the oven on a low heat for 45 minutes to an hour
- place the cous cous in a bowl and pour over boiling water until the cous cous is just covered and allow the water to soak in, then fluff with a fork and serve the Cod Cheek Tagine ontop of the cous cous.
