Piri Piri Mackerel with Mint and Lemon Cous Cous
Ingredients
– 4x Piri Piri Mackerel Fillets
– 1 cup Cous Cous
– Fresh Mint <Chopped>
– Zest of ½ a Lemon
Method
– Fry, Grill or Oven Bake the Mackerel fillets until the flesh becomes opaque
– Whilst cooking the fish Boil the kettle
– Place Cous Cous in a bowl and pour over the boiling water, just enough to cover
– Once the water has been absorbed stir in the mint and lemon zest with a fork
– Serve and enjoy
