Cod Cheeks with Samphire
Ingredients
500g Cod Cheeks
250g Fresh Samphire
2 Tablespoons Plain Flour
1 Tablespoon Butter
1 Splash cooking oil
1 Clove Garlic
1 Red Chilli diced <OPTIONAL>
Salt and Pepper
1 Sandwich Bag
Method
Put the flour into the sandwich bag and season the flour with the salt and pepper. Place the Cod Cheeks in the bag and shake until they covered in the flour (it may be a easier to do this in batches). Once all of the Cod Cheeks are covered in a layer of flour, melt the butter in a frying pan and add the oil (this will prevent the butter from burning) once the butter and oil have come to temperature add the Garlic then fry the cod cheeks until slightly golden. Whilst the Cod Cheeks are frying, place the Samphire in saucepan and fill with just enough water to cover the Samphire and a boil for around 2 minutes. Once everything is cooked serve, using the Samphire as a base for the Cod Cheeks to rest on, finally sprinkle over the diced chilli and enjoy!
