Steamed fillets of plaice with pak choi, ginger, sesame and soy

Ingredients (for 4)
•  8 small plaice fillets, folded, or 4 small pieces of hake fillet, 150g each
•  1 dessert spoon of chopped coriander
•  1 dessert spoon of sunflower oil
•  A splash sesame oil
•  Teaspoon of toasted sesame seeds
•  Soy sauce – about 4 soup spoons
•  4 thinly sliced spring onions
•  3 pak choi, quartered

Method:
1. Put a pan of water onto boil using two steamers
2. Put a disc of greased proof paper in the bottom of each one
3.  Put the fish into one and the pak choi into the other and steam for approximately 5 minutes
4. Mix together the oils with the soy and coriander, sesame seeds and spring onions

To serve

1. Arrange the fish with the pak choi in deep bowls
2. Spoon over the dressing and serve
