MACKEREL WITH TOMATO & AVOCADO SALSA
Ingredients
– 8 Mackerel Fillets
– 75g Breadcrumbs
– 1 tbsp Thyme
– 1 tbsp Chopped Parsley
– Zest of 1 Lemon
– 30g Butter Melted
– 300g Tomatoes Chopped
– 2 Avocados Chopped
– 1 Crushed Garlic Clove
– 4 tbsp Olive Oil
Method
Mix The breadcrumbs with Thyme, Parsley, Lemon and Melted Butter. Lay Mackerel on a baking sheet and cover with the bread mixture.
In another bowl mix the Tomatoes, Avocado and Garlic and season to taste. Grill the fish on a medium/high heat for 4-5 minutes, until crust is golden brown. Serve with the Salsa and some New Potatoes.
