Chorizo and Spinach Stuffed Squid

This recipe was given to us by one of customers in Burwell, and this is our adaptation. We had it as a starter on Saturday night, but this recipe can easily be scaled up to be served as a main course with each person having a Squid each.

Ingredients

– 1 prepared squid

– 100g Chorizo (Chopped)

– 30g Spinach

– 6 cherry toms (Cut into quarters)

– 4 sun dried tomatoes (Chopped)

– 1 garlic clove (Crushed)

– Seasoning

– 50g breadcrumbs

Method

It may take a little while to chop up all of the ingredients (around ten minutes), once that’s done its all very simple, mix all of the ingredients in a bowl, then stuff the squid tube with the resulting stuffing. Cut slits into the top of the squid and place into a baking dish. Then put the tentacles and wings next to the tube and cover with any left over stuffing mixture. Bake on a medium heat for about 10 – 15 minutes. Serve and enjoy!
