Over Baked Mackerel with a Salt and Pepper Crust

This is as simple as you like, season a baking sheet with salt and pepper and a drizzle of oil, place two Mackerel fillets onto the seasoning and bake in the over for about 5 – 10 minutes on a high heat.

Once cooked turn off the oven and leave the fillets on the baking sheet inside the oven for about 2 minutes extra, this will help crisp the skin serve with a simple salad!
